Ahhh, a classic! I was waiting until I had 7 pumpkin recipes filmed and ready so I could do a “7 days of macro friendly pumpkin recipes” series buuuut I’m impatient and want to spread out my pumpkin joy too. It is still September after all haha
Let’s jump right in! This recipe makes 1 serving and is 155 calories / 23 carbs / 8 protein / 3 fat per serving when made as is. I wanted to make a base recipe and let you decide whether or not you wanted to add protein to the mix! If you want some extra protein you can add some powder in, start with half a scoop and see how you like it or use a muscle milk (or something like that) in place of the almond milk.
INGREDIENTS
56 grams Nonfat plain greek yogurt
1/2 cup Organic pumpkin puree by pacific
2 TBSP Sugar free syrup
1 tsp Pure vanilla extract
1/2 cup Old fashioned rolled oats
1.5 tsp Pumpkin pie spice
1/2 cup Vanilla almond milk, unsweetened
INSTRUCTIONS
1. In a small mixing bowl, stir together yogurt, milk, pumpkin, syrup & vanilla
2. Stir in oats and pumpkin pie spice
3. Transfer to a mason jar with lid or airtight container
4. Refrigerate overnight and up to 4 days in advance
5. Once ready to eat top with fat free whipped cream if desired
